The Most Delicious Jam Drop Recipe

These jam drops remind me of my Nan; they were one of her good old favourites that she used to bake regularly. This jam drop recipe is quick, easy, and ooohhh so delicious!

I was searching through some of my old recipes and I came across this recipe handwritten by my Nan. She was a great baker, always having beautiful fresh new treats ready for when we visited, scones, ANZAC biscuits and my favourite were her Jam Drops. To my delight, I found this recipe.  I am so glad I can share a part of my childhood from my Nan with my kids.

Ingredients

Units Scale
  • 125g butter, softened
  • 3/4 cup caster sugar
  • 2 eggs
  • 2 cups self raising flour
  • pinch of salt
  • 1/4 cup jam, any flavour

Instructions

  1. Preheat oven to 180°C, fan forced.
  2. Line 2 baking trays with baking paper or a silicone mat.
  3. In an electric mixer, add butter and sugar, mix for 3-5 minutes until light and fluffy.
  4. Add eggs, mix to combine.
  5. Add flour and salt, mix to form dough.
  6. Roll tablespoon of mixture into balls, flatten slightly.
  7. Place on baking tray, leave 5cm between each.
  8. Press floured finger deeply into the centre of each ball.
  9. Fill each hole with your favourite flavour of jam.
  10. Bake biscuits for 10 minutes before transferring to a wire rack to completely cool.
