If you’re looking for a fun and delicious sweet treat, these Marshmallow Balls are perfect. Soft marshmallows are coated in a rich, chocolatey biscuit mixture and rolled in coconut to create a chewy, sweet bite that everyone will love.
They’re quick to make, store beautifully in the fridge, and are ideal for lunchboxes, afternoon snacks, or even as a treat to share over Easter.

I may have tested one (or two) while they chilled… they’re quite sweet, so a little goes a long way!

Tip: These can be made up to a week ahead. Store them in an airtight container in the fridge and enjoy them cold and firm.

- In a food processor blitz 375 g Arnott's Nice biscuit to make crumbs.
- In a medium saucepan, over low heat add 200 g butter, 395 g sweetened condensed milk, 1 cup brown sugar, 1/4 cup cocoa powder and 2 tsp vanilla extract.
- Stir for 3–5 minutes until smooth and combined.
- Remove from heat and stir through the biscuit crumbs.
- Allow the mixture to cool slightly before rolling, as it will be hot and can melt the marshmallows if handled too soon.
- Place 1 1/2 cups desiccated coconut into a separate small bowl.
- Using damp hands, press about 3 heaped teaspoons of the mixture around each marshmallow, rolling firmly to form a ball.
- Roll each ball in coconut to coat.
- Place the balls on trays and chill in the refrigerator for 1 hour, or until firm.
- Serve and enjoy!

No, you shouldn’t have done that! I am now thinking of nothing but marshmallow balls and am highly likely to make these and eat the lot! I’m doomed!! 🙂
I class myself as an ok baker and these were horrible to make. Very time consuming.
Mix was sloppy (I followed recipe) and if I had read the comment below the recipe about waiting until it cools I might have had a bit more success but I just got cranky and threw it all away. Teenagers wouldn’t even help that is how messy it was lol.
These are hard to make, yes. But worth every bit of time. I get rave reviews on these every time I serve them. I keep them in my freezer and take them out as needed, they are good frozen too!

Oh yum, but I left out the cup of sugar and they were still very sweet (and yummy), an other idea would be to mix into the crumb mix mini marshmallows, press into a slice tin and top with melted chocolate, slice to serve. Once again you will not need much as it is rather sweet ( leave out the sugar), this also solves the issue of being messy (if that is an issue for you)
