Ingredients
  

  • 125 g peanut butter
  • 60 g honey
  • 2 tablespoons coconut oil melted
  • 30g vanilla protein powder
  • 1 cup rice puffs
  • 1/2 cup oats
  • 2 tablespoons desiccated coconut
  • 1/2 cup dark chocolate melts
  • 2 teaspoons coconut oil

Method
 

  1. Line a loaf pan with baking paper, or use a silicone loaf pan for easy removal.
  2. In a bowl, combine 125 g peanut butter, 60 g honey, and 2 tablespoons coconut oil. Mix well until fully combined.
  3. Sprinkle the 30g vanilla protein powder into the bowl and mix it thoroughly into the peanut butter mixture.
  4. Add the 1 cup rice puffs, 1/2 cup oats and 2 tablespoons desiccated coconut to the bowl. Stir well to ensure the rice puffs are fully coated with the mixture.
  5. Spoon the mixture into the prepared loaf pan and flatten it evenly using the back of a spoon.
  6. In a microwave-safe bowl, add 1/2 cup dark chocolate melts and 2 teaspoons coconut oil. Microwave on medium for 1 minute and 30 seconds, or until melted. Stir every 30 seconds to ensure the chocolate melts smoothly.
  7. Pour the melted chocolate over the peanut butter base, spreading it evenly.
  8. Place the loaf pan in the refrigerator overnight to set.
  9. Once set, slice the mixture into bite-sized portions and enjoy!
