This is one of those recipes where you have a few bananas you need to use up and a spare 10 minutes to quickly whip up a basic loaf cake. This Banana & Coconut Loaf Cake is light and fluffy, freezeable, a great addition to the lunchbox or to have for afternoon tea.
I left this recipe quite simple, but you can add your favourite kind of nut to the batter if you want a bit of crunch. I enjoy pecan or walnuts in my banana loaf.
I made this recipe in the thermomix, however I have included a regular version as well.

Ingredients
- 3 bananas
- 1 egg
- 140g brown sugar
- 40g butter, room temperature
- 250g self-raising flour
- 1 teaspoon baking powder
- 30g desiccated coconut
- 20g milk
Instructions
- Preheat oven to 180C.
- Grease and line a loaf tin.
- Place banana, egg, sugar & butter into TM bowl, 10 sec / speed 5.
- Scrape down the sides of the TM bowl.
- Add flour, baking powder, coconut and milk, 5 sec / speed 6.
- Pour into prepared loaf tin.
- Bake in oven for 30-40 minutes, or until golden.
- Cool in loaf tin for 5 minutes, then cool or a wire rack.
I also cook this recipe the regular way, depending on my mood LOL. I use a stand mixer, as I can never whisk sugar and butter together till creamy.

- 3/4 cup brown sugar
- 40 grams Butter
- 3 bananas, mashed
- 1 egg
- 2 cups self raising flour
- 1 teaspoon baking powder
- 1/4 cup desiccated coconut
- 2 tablespoons milk
Instructions
- Preheat oven to 180C.
- Grease and line a loaf tin.
- Cream butter and sugar together in an electric mixer, on medium speed until light and fluffy.
- Add egg and banana, mix until just combined, scrape side of bowl.
- Add flour, baking powder, coconut and milk, mix until well combined, do not overmix.
- Pour into prepared loaf tin.
- Bake in oven for 30-40 minutes, or until golden.
- Cool in loaf tin for 5 minutes, then cool or a wire rack.
Do you freeze bananas to use in recipes like this? I do all the time, learn more about freezing bananas here. At the end of the school week we may have one or two bananas going a little brown, I either make a banana smoothie or put them in the freezer for a round of lunchbox baking.

I think there is a mistake in step 3 of the regular recipe. Should it read cream sugar and eggs?

I’d say it’s cream butter & sugar as the eggs are added in step 4. I might make this today – funnily enough I just popped 3 bananas in the freezer yesterday. My other favourite is Banana & Choc Chip muffins.
