A healthy after school snack for the kids or leave out the nuts (if not permitted at your school) and add to the kids school lunchbox.
INGREDIENTS:
- 90 g low-fat spread
- 1/3 cup brown sugar, firmly packed
- 1 egg, lightly beaten
- 3/4 cup self-raising flour
- 1 tsp baking powder
- 1/2 cup banana, mashed
- 3/4 cup oat bran
- 1/2 cup buttermilk
- 3/4 cup pecans, chopped
I used 2 over ripe bananas in this mix and froze what we didn’t eat for afternoon tea to have on hand to put in the kids lunchboxes.
