Easy Chicken Lasagne

This is a super easy chicken lasagne recipe that takes next to no time to make, making it a great choice for a busy weeknight dinner.

This chicken lasagne recipe is a fabulous meal for a house with growing children. My teenagers are able to put away quite a lot of food these days, so I need hearty meals that will fill them up and curb their appetites until morning.

This is one of those dinners that can be made after a long day at work, and then while it’s cooking in the oven a simple side of steamed vegetables can be quickly prepared.

If you find yourself with more time on your hands, you could forgo the pre-made carbonara sauce and make your own instead.

Easy Chicken Lasagne

Ingredients
  

  • 1 cup tasty cheese grated
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon olive oil
  • 1 brown onion chopped
  • 500 g chicken mince
  • 2 cups baby spinach leaves roughly chopped
  • 400 g can crushed tomatoes with herb flavours
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 425 g carbonara pasta sauce
  • 4 fresh lasagne sheets

Method
 

  1. Preheat oven to 180°C, fan forced.
  2. Combine cheeses in a bowl, set aside.
  3. In a small frying pan, heat oil over medium-high heat.
  4. Cook onion for 3-5 minutes or until tender.
  5. Add mince, cook for 3-5 minutes or until browned.
  6. Stir through spinach, tomatoes, tomato paste and oregano. Bring to the boil.
  7. Reduce heat and simmer for 5 minutes or until the mixture thickens slightly.
  8. Spread one tablespoon of carbonara sauce over the base of a 12-cup (3L) oven-proof dish.
  9. Place one lasagne sheet in dish.
  10. Spoon one-third chicken mixture over lasagne sheet.
  11. Top with one quarter carbonara sauce, one quarter cheese mixture and another lasagne sheet.
  12. Repeat same quantities to form 3 layers.
  13. Spoon remaining carbonara sauce onto last lasagne sheet, sprinkle with remaining cheese.
  14. Bake pasta bake in oven for 20-30 minutes or until golden. Serve.

Yes I do, I use the Latina Lasange Sheets, found in the cold food section at the supermarket with Raviolli’s and sauces.

Hi, thanks for posting. I made it in my Thermie last night – didn’t buy the carbonara sauce, made a bechamel in 7 minutes, then cooked chicken, etc in thermie in 10 minutes. Was a real hit with all of us, took leftovers to friends for lunch and they loved it too!
