Caramel Muffins

These caramel muffins have been a favourite in our household for years, they would of been one of the very first recipes I made my hubby when we moved in together. Usually the family gets excited when I bake these muffins because they like to eat the remainding unused caramels.

Ingredients
  

  • 2 cups SR Flour
  • 1/2 cup caster sugar
  • 1 cup brazil nuts roughly chopped
  • 1 egg
  • 3/4 cup milk
  • 60 g butter melted
  • 200 g packet jersey caramels
  • 12 brazil nuts extra

Method
 

  1. Preheat oven to 180C
  2. Fill 12 hole muffin tin with muffin liners
  3. Sift flour into bowl, add all remaining ingredients, except caramels and extra brazil nuts
  4. Spoon half mixture into each
  5. Add 2 jersey caramels on top of each mixture
  6. Top each with remaining mixture
  7. Add brazil nut to the top of each
  8. Bake in oven for 18-20minutes or until golden brown

Oh how delish! I have never thought to put jersey caramels into muffins! Such a brilliant idea!

Hi could you make these without the nuts as my kids don’t like nuts what could I substitute for the nuts or just leave them out??

Hi Nicole, Absolutely you could replace them with any ingredient you like or leave them out. I think they would still be yummy either way.
