These caramel muffins have been a favourite in our household for years, they would of been one of the very first recipes I made my hubby when we moved in together. Usually the family gets excited when I bake these muffins because they like to eat the remainding unused caramels.

Ingredients

- 2 cups SR Flour
- 1/2 cup caster sugar
- 1 cup brazil nuts, roughly chopped
- 1 egg
- 3/4 cup milk
- 60g butter, melted
- 200g packet jersey caramels
- 12 brazil nuts, extra
Instructions
- Preheat oven to 180C
- Fill 12 hole muffin tin with muffin liners
- Sift flour into bowl, add all remaining ingredients, except caramels and extra brazil nuts
- Spoon half mixture into each
- Add 2 jersey caramels on top of each mixture
- Top each with remaining mixture
- Add brazil nut to the top of each
- Bake in oven for 18-20minutes or until golden brown

Hi could you make these without the nuts as my kids don’t like nuts what could I substitute for the nuts or just leave them out??
Hi Nicole, Absolutely you could replace them with any ingredient you like or leave them out. I think they would still be yummy either way.
