During the process of trying to get my house back into order I decided to be kind to myself and make easy meals that didn’t involve hunting for a recipe, too much preparation or dirty dishes. I’m a messy cook, somehow I use up the full kitchen bench, just for this week I didn’t want to mess up the kitchen too much as I wanted to wind down and relax.
Having easy meals doesn’t mean that we need to miss out on vegetables or order take-out. Easy meals to me means:
- preparation in 15 minutes or less
- not many dishes to clean
This weeks meal plan
Monday – Mince Pasta Bake
Tuesday – Maggi So Crispy Chicken Schnitzels with potato and vegetables
Wednesday – Eggs on toast
Thursday – Maggi One Pan Satay Chicken Rice, double batch
Friday – last nights left overs
Saturday – Fish, couscous and vegetables
Sunday – Sausages, potato and vegetables
Baking – Chocolate Scones

Maggi So Crispy Chicken Schnitzels
Place recipe base into zip lock bag
Beat egg, dip in chicken
Place one at a time in ziplock bag and shake
Place on lined oven tray, and bake in oven for 25 minutes. No oil needed!!
Maggi One Pan Satay Chicken Rice
Brown chicken, add in vegetables
Add recipe base, peanut butter, stir. Then add water and rice. Boil, then simmer
Satay rice is a favourite in our household!
