Double Chocolate Chip Cookies

After a double dose of chocolate goodness??  These soft and delicious Double Chocolate Chip Cookies take the love of chocolate to a new level.  Have them with your cuppa or a great afternoon snack for the kids.  I have included both the Thermomix and regular recipes below.

I had a couple of friends over for a cuppa and had a plate full of these cookies on the table and they loved them.  One even suggested they would go down a treat sandwiched with ice cream… I love her thinking!!

Double Chocolate Chip Cookies

Ingredients

Scale
  • 125g butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup self-raising flour
  • 1/3 cup cocoa
  • 125g milk chocolate melts
  • 1/2 cup milk choc chips
  • 3/4 cup white choc chips

Instructions

  1. Preheat oven to 160°C, fan forced.
  2. Line 2 baking trays with non-stick baking paper or silicone mats.
  3. Melt milk chocolate melts in the microwave, following packet instructions, set aside.
  4. In an electric mixer place the butter and sugar, beat together for 30 seconds.
  5. Add egg and vanilla, continue mixing for a further 20 seconds until combined.
  6. Fold flour, cocoa and melted chocolate through the mixture, scrape the sides of the bowl.
  7. Add the choc chips and mix until combined.
  8. Place heaped tablespoons of mixture onto prepared oven trays, flatten slightly.
  9. Bake in oven for 10-12 mins or until golden.
  10. Cool on trays for 5 minutes then transfer to a cooling rack.

Scale
  • 125g butter, softened
  • 135g brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 150g self-raising flour
  • 40g cocoa
  • 125g milk chocolate melts
  • 75g milk choc chips
  • 100g white choc chips

Instructions

  1. Preheat oven to 160°C, fan forced.
  2. Line 2 baking trays with non-stick baking paper or silicone mats.
  3. Melt milk chocolate melts in the microwave, following packet instructions, set aside.
  4. Place the butter and sugar into your thermomix bowl, mix 30 sec / speed 6.
  5. Add egg and vanilla extract, mix 20 sec / speed 4.
  6. Add flour, cocoa and melted chocolate, mix 10 sec / speed 4.
  7. Scrape the bowl 10 sec / speed 4 or until mixture has combined.
  8. Add the choc chips, mix 20 sec / speed 3 / reverse.
  9. Place heaped tablespoons of mixture onto prepared oven trays, flatten slightly.
  10. Bake in oven for 10-12 mins or until golden.
  11. Cool on trays for 5 minutes then transfer to a cooling rack.
