After a double dose of chocolate goodness?? These soft and delicious Double Chocolate Chip Cookies take the love of chocolate to a new level. Have them with your cuppa or a great afternoon snack for the kids. I have included both the Thermomix and regular recipes below.
I had a couple of friends over for a cuppa and had a plate full of these cookies on the table and they loved them. One even suggested they would go down a treat sandwiched with ice cream… I love her thinking!!

- Preheat oven to 160°C, fan forced.
- Line 2 baking trays with non-stick baking paper or silicone mats.
- Melt milk chocolate melts in the microwave, following packet instructions, set aside.
- In an electric mixer place the butter and sugar, beat together for 30 seconds.
- Add egg and vanilla, continue mixing for a further 20 seconds until combined.
- Fold flour, cocoa and melted chocolate through the mixture, scrape the sides of the bowl.
- Add the choc chips and mix until combined.
- Place heaped tablespoons of mixture onto prepared oven trays, flatten slightly.
- Bake in oven for 10-12 mins or until golden.
- Cool on trays for 5 minutes then transfer to a cooling rack.

- Add egg and vanilla extract, mix 20 sec / speed 4.
- Add flour, cocoa and melted chocolate, mix 10 sec / speed 4.
- Scrape the bowl 10 sec / speed 4 or until mixture has combined.
- Add the choc chips, mix 20 sec / speed 3 / reverse.
- Place heaped tablespoons of mixture onto prepared oven trays, flatten slightly.
- Bake in oven for 10-12 mins or until golden.
- Cool on trays for 5 minutes then transfer to a cooling rack.
