Freezing left over stock – don’t waste it

I like to purchase stock in bulk when I see it on sale at the supermarket and usually buy it in 1 Litre, 4 cup quantities.  Although some recipes I cook for dinner may require 1 cup of beef or chicken stock, while others 2-3 cups, so I’m not using the full package quantity. When you read the packaging it does say to dispose of stock 3 days after opening. Rather than wasting the stock, I freeze it instead!!

Place silicone cube trays, I purchased these from Target for only $2 and Kmart for $1.50, onto a baking tray for stability when moving them to the freezer.  Then pour left over stock into the silicone trays.

I prefer to use silicone as it’s so much easier to push the frozen stock out of the silicone trays.

I store them in an airtight container, with my fancy label (masking tape and marker) and keep them in the freezer for the next time I need stock.

  • I have colour coded decor tubs I use, each one holds 1 cup and it saves the “No I won’t put a label on it, I’ll remember whats in it” moment, which then results in confusion a month later.
