Tuna Burritos

Ingredients
  

  • 1 tablespoon olive oil
  • 1 brown onion finely chopped
  • 2 garlic cloves crushed
  • 425 g can tuna in brine drained
  • 410 g can crushed tomatoes
  • 100 g baby spinach leaves
  • Salt and pepper to taste
  • 8 burrito tortillas
  • 1 cup grated tasty cheese

Method
 

  1. Preheat oven to 180C
  2. Grease a rectangular casserole dish
  3. Heat oil in frying pan over medium heat.
  4. Add onion & garlic, stir for approx 4 minutes or until tender
  5. Add tuna, tomatoes, spinach leaves, salt and pepper
  6. Cook, stirring, for 5 minutes or until heated through
  7. Spoon tuna mixture onto tortillas
  8. Roll tortilla into a tube then place into casserole dish
  9. Sprinkle tortillas with cheese
  10. Bakein oven for 15 - 20 minutes or until cheese has melted
  11. Serve with salad

Yes very healthy, kids loved them, I was a bit light on the cheese just to make it healthier.
