Cheese & Bacon Mini Quiches

These Cheese and Bacon Mini Quiches are perfect to make for parties, when you have friends over for morning tea or lunch or cold in the kids lunch boxes.  They are really easy to make and fuss free.

Cookbook for school lunches

Cut circles of puff pastry, use a cutter that is 1cm bigger than mini muffin pan hole (as pictured below, the cutter I used was too small).  Fry bacon and onion, sprinkle onto pastry along with cheese, then pour over egg mixture.

Mini Quches are delightful snacks to have for parties, morning tea or food to put in kids lunchboxes. Cheese and Bacon Mini Quiches are delicious.

Many other variations can be used:

  • spinach and fetta,
  • roast pumpkin and pinenuts,
  • ham and pineapple

Cheese & Bacon Mini Quiches

Serves: 24

Prep Time

Cook Time

Total Time

10 mins

15 mins

25 mins

Ingredients
  • 4 sheets puff pastry, thawed
  • 1 teaspoon oil
  • 4 rashers bacon
  • 1/2 onion, finely chopped
  • 1 cup tasty cheese, grated
  • 4 eggs
  • 1/2 cup milk

Instructions

  1. Preheat oven to 180C
  2. Spray a 24 hole mini muffin tin with cooking spray
  3. Place oil in small frying pan over medium heat
  4. Cook bacon and onion until bacon has browned, allow to cool
  5. Using a 2 5/8″ circle shaped cutter cut out 24 rounds of pastry
  6. Place pastry in each muffin hole
  7. Place a small spoonful of bacon and onion mixture into each hole
  8. Sprinkle with pinch of cheese
  9. Whisk milk and eggs together in a jug
  10. Pour egg mixture into pastry cases just below the top (allowing room for egg mixture to rise)
  11. Bake for 12-15 minutes or until browned on top

I use an old shot glass, its a taller thin one. This is the only thing they get used for noadays 🙁

I’ve used mountain bread for these before, it helps if you dampen the mountain bread first so it doesn’t crack.

Vanessa, i would try turning the temperature down on your oven and cooking them for a little longer. They won’t be crispy on the bottom but should be cooked.

Helen i like to take them out first thing in the mornings or if you like taking them out the night before when preparing lunches is another alternative. They defrost perfectly.

Hi Kat. I made these today. However, I only used up 2 pieces of Pampas puff pastry and not 4 pieces? The bacon mixture yielded exactly 24 mini quiches but I had leftover egg wash and pastry so with that, I managed to get 3 more round cut pastry, used the off cuts to make another 3 more, used about half a slice of ham for each pastry case, topped with cheese, and used up the rest of the egg wash. My kids polished off 10 mini quiches each! It’s a winner! I also used half a packet of Don diced bacon (about 125g), and a scone cutter which was perfect for cutting out the round pastry. I also just added a pinch of salt to the egg wash mix. Thank you for posting such a easy and delicious recipe!

so glad that your tribe loved it. I bake these for kids lunch boxes to freeze but half end up eaten before they get into the freezer. These would have to be one of my favourite lunches too.

I probably wouldn’t freeze these as the pastry would be chewy when you defrost them
So yummy straight from the oven when nice and warm

you sure can 🙂 they will probably just be a little more “soggy” than crispy from the microwave, you could always reheat in the oven for a short time to keep them crispy and crunchy.

I always add something baked to the lunchboxes like a muffin or biscuits. I usually always bake with the intention to freeze. I place the frozen muffin/biscuits into lunch boxes that morning and it's always defrosted by morning tea time. I spend an hour or two in the kitchen every few weeks to stock up the freezer. My favourites are coconut & pineapple muffins, 100+ cookies, and ham muffins 👩‍🍳🍪

✨ Task: Wardrobe Declutter

In our new year refresh series, we turned around our coat hangers to see at the beginning of the next season what we haven’t worn (my hanger method). I forgot to take a photo but you will see the number of clothes I haven’t worn between then and now in my stories. There were quite a few. 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I have since gone through and purged them and because I have to be honest with you, I have put on weight in this past year and choosing clothes to wear in the mornings has been a little depressing as there are quite a few that don’t fit me. It has only been 24 hours since I tidied up my wardrobe but waking up this morning and picking my clothes was already a brighter and easier start to my day 💛

LOL, and yes I colour code my clothes.

Each week I plan my meals for the upcoming week- what most people call meal or menu planning. I have been doing this for a good 18 years and I can't recommend it enough! 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
It really is a simple task that takes 5-10 minutes to plan one week of meals. The money and time that these five minutes save me throughout my week, makes it well worth the effort. Plus, I’m not a huge fan of visiting the grocery store more than once a week 🛒
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I have been online grocery shopping for nearly 2 years now. I love it, I rarely see the inside the grocery store these days. I do a local pick up and use my laundry basket with legs instead of bags. Makes unpacking when in the kitchen so much easier 😊
