This Chicken and Bacon Casserole recipe is an easy slow cooker dinner that can be prepared ahead of time, making for a simple and stress-free midweek dinner option.
This meal is incredibly easy to make! It’s a matter of adding some diced chicken, bacon and onion to the slow cooker, along with a can of soup and then pouring in some wine to taste. A quick, easy and inexpensive dinner idea.
I serve my Chicken and Bacon Casserole with pasta, but you could also add some diced potato into the slow cooker for an instant meal when finished. This slow cooker Chicken and Bacon Casserole is also great for kids that don’t like overly flavoursome dinners.

This looks delicious. I was looking for a slow cooker recipe for tomorrow night. I am going to give this one a go. Thanks for the suggestion
It’s super easy Kirsty, great easy and quick throw together.
Thanks for a great meal idea for tomorrow night. Going out for the day with the kids, so will be nice to know that I will come home to dinner organised. Sounds yummy too…
An 8 minute slow cooker recipe??????
OH yum sounds good!
just looked at your meal plan do you eat the chicken nuggets to or does hubby cook you to aomething else??
something
Is there anything that I could use as a substitute for the mushroom soup? cream of chicken maybe?
Yes, I think cream of chicken would work, it would change the flavour a little, perhaps if you add some herbs to enhance it.
Sounds wonderful, will try it in my dream pot. :))
What can I use instead of the wine??
If you’re not worried about the alcohol I”ve replaced wine with apple cider before.
I was wondering this too. I don’t like wine taste …I was thinking maybe chicken stock??
Cooked this tonight. Very yummy but my chicken was a bit too dry. I cooked it 4 hrs on low then added 1.5 tbs corn flour and cooked on high for 1.5 hrs. Served with mashed potato and veg.
Ooh glad you liked it! I like using chicken breasts but you could also try chicken tights, they don’t dry out as much.
Do you cook the chicken and bacon before adding to the crock-pot? Or add raw?
Hi Carolyn, No add everything raw, it cooks away beautifully and tastes even better.:)
This was so easy and yummy for a cold wet night. I added dry pasta and a cup of milk towards the end and then done frozen mix veg and fresh broccoli. Yum.
clever idea, so pleased to hear you enjoyed it 😉
I will use chicken thighs as I have used chicken breasts for other recipes in the slow cooker and they turn out dry.. Umm, what can I use instead of white wine?
