Method
- Roll eggs in flour, shake off excess, set aside
- Place mince, breadcrumbs, garlic, onions, parsley, eggs and salt & pepper into bowl, combine using hands, mixing well.
- Divide mixture into 12
- Shape each into a flat patty
- Wrap each patty around egg to enclose
- Heat 2 tbsp oil in frying pan, over medium heat
- Add 6 patties to frying pan, cook on each side until browned and cooked through. Approx 3-4 minutes each side.
- Transfer to plate and repeat with remaining patties
- Serve with salad

Hubby loves these! I can’t work out how to do soft boiled and I think I might need to add more seasoning to the meat next time. Mine always seem to split open when I’m cooking them too, but they’re a great occasional meal. A bit fiddly for day to day dinner. 🙂

Kat can you freeze these. They look delicious
Hmm…. you know I freeze everything, but I do wonder how the egg would go frozen, I’ve never tried it myself so I am a little unsure, sorry I can’t give you a proper answer Rebecca.
