Scotch eggs

These are delicious hot or cold.

Ingredients
  

  • 12 hard boiled eggs
  • 2 tbsp plain flour
  • 1 kg beef mince
  • 1 cup fresh breadcrumbs
  • 2 tsp minced garlic or 2 cloves of garlic
  • 3 green onions
  • 1/4 cup parsley chopped
  • 2 eggs
  • salt and pepper to taste
  • 4 tbsp oil

Method
 

  1. Roll eggs in flour, shake off excess, set aside
  2. Place mince, breadcrumbs, garlic, onions, parsley, eggs and salt & pepper into bowl, combine using hands, mixing well.
  3. Divide mixture into 12
  4. Shape each into a flat patty
  5. Wrap each patty around egg to enclose
  6. Heat 2 tbsp oil in frying pan, over medium heat
  7. Add 6 patties to frying pan, cook on each side until browned and cooked through. Approx 3-4 minutes each side.
  8. Transfer to plate and repeat with remaining patties
  9. Serve with salad

Hubby loves these! I can’t work out how to do soft boiled and I think I might need to add more seasoning to the meat next time. Mine always seem to split open when I’m cooking them too, but they’re a great occasional meal. A bit fiddly for day to day dinner. 🙂

Hmm…. you know I freeze everything, but I do wonder how the egg would go frozen, I’ve never tried it myself so I am a little unsure, sorry I can’t give you a proper answer Rebecca.
