This recipe is super easy to make and uses ingredients that you will most likely already have in your pantry. Coconut Rice Pudding is a comforting dessert that will warm you up in the colder seasons. The coconut taste gives this dish a creamy and rich flavour. You can also make it dairy-free by using an alternative milk. Add some fruit on top to give it extra flavour.
Coconut Rice Pudding

- 1 cup long grain rice
- 450ml milk of choice
- 400ml coconut milk
- 1/2 cup sweetener of choice
- 1/2 cup shredded coconut
- 2 eggs
- 1 vanilla bean pod (cut into quarters)
- 1 tspn coconut oil
- 1/2 tspn ground cinnamon
- 1/4 tspn ground nutmeg
- Good pinch of salt
- Add all the ingredients into the slow cooker and whisk well
- Cook on medium for 3 hours
