Ingredients
  • 2 cups dried spiral pasta
  • 1 tbs oil
  • 4 green onions, thinly sliced
  • 2 tsp minced garlic
  • 2 teaspoons lemon rind, finely grated
  • 2 cups cream
  • 415g can red salmon, drain, remove skin and bones, flake
  • 1 tsp dill, chopped
  • ¾ cup panko breadcrumbs
  • ¾ cup grated tasty cheese
  • 1 tbs parsley, chopped
  • 1 tsp minced garlic, extra

Instructions
  1. Preheat oven to 180C
  2. Have a large casserole dish on hand
  3. Cook pasta in a large saucepan of boiling, follow packet directions
  4. Heat oil in a frying pan over medium heat
  5. Add spring onions and garlic, stirring for 1 minute
  6. Stir in lemon rind, cream and salmon
  7. Reduce the heat to low, continue stirring until heated through
  8. Sprinkle dill over creamy mixture, then add to pasta, stir
  9. Spoon into casserole dish
  10. In a small bowl combine breadcrumbs, cheese, parsley and extra garlic
  11. Sprinkle breadcrumb mixture over dish
  12. Bake for 20-30 minutes or until golden

    Oh Yum!! that looks absolutely DELICIOUS!!!! Going to try that one out. Never thought of using breadcrumbs as the topping before. And I love Panko breadcrumbs. I buy a large packet from the Asian grocery normally. :)
