Allow this loaf to sit for 24 hours before slicing.
Ingredients

- 175g butter
- 150g castor sugar
- 400g plain flour, sifted
- pinch of salt
- 4 tsp baking powder
- 300g dried fruit mix
- 125ml milk
- 2 eggs
Instructions
- Preheat the oven to 180C
- Prepare and line loaf tin
- Melt the butter and sugar together in a medium saucepan over medium heat, stirring
- Once butter has melted remove from heat and allow to cool
- Place all dry ingredients into a mixing bowl, add the dried fruit
- Make a well and add in the milk, eggs and butter mixture, stir mix until combined
- Spoon mix into loaf tin
- Bake for 50 minutes or until golden and skewer comes out clean
- Remove from oven and allow to cool in tin for 20 minutes
- Cool completely on rack
- Store in an airtight container for 24 hours before slicing
