Quinoa and Zucchini Fritters

Ingredients

Scale
  • 2 3/4 cups cooked quinoa
  • 4 eggs, lightly beaten
  • 2 tablespoons parsley, finely chopped
  • 1/2 onion, finely chopped
  • 1/3 cup parmesan cheese, grated
  • 3 cloves garlic, crushed
  • 3/4 cups fresh breadcrumbs
  • 1 zucchini, grated
  • salt and pepper, to taste
  • 12 tablespoons olive oil

Instructions

  1. Place all ingredients, except oil into a large bowl and stir well to combine
  2. Divide mixture into 16 even patties (approximately 2 tablespoons each)
  3. Heat oil in large frying pan, place patties in pan, do not overcrowd, you may need to cook these in batches
  4. Cook each side for 5-7 minutes or until golden brown
  5. Remove from pan onto a plate lined with paper towel to absorb any oil
  6. Cook remaining patties
  7. Serve with salad and smoked salmon
