Ingredients
- 2 3/4 cups cooked quinoa
- 4 eggs, lightly beaten
- 2 tablespoons parsley, finely chopped
- 1/2 onion, finely chopped
- 1/3 cup parmesan cheese, grated
- 3 cloves garlic, crushed
- 3/4 cups fresh breadcrumbs
- 1 zucchini, grated
- salt and pepper, to taste
- 1–2 tablespoons olive oil
Instructions
- Place all ingredients, except oil into a large bowl and stir well to combine
- Divide mixture into 16 even patties (approximately 2 tablespoons each)
- Heat oil in large frying pan, place patties in pan, do not overcrowd, you may need to cook these in batches
- Cook each side for 5-7 minutes or until golden brown
- Remove from pan onto a plate lined with paper towel to absorb any oil
- Cook remaining patties
- Serve with salad and smoked salmon
