Ingredients
- zest from one lemon
- juice from one lemon
- pinch salt
- 10g vanilla extract
- 130g desiccated coconut
- 85g ground almonds
- 50g coconut oil
- 85g honey
- 1/2 cup desiccated coconut, extra
Instructions
- Roll lemon with pressure on bench a few times (this will make it easier to juice)
- Peel the zest from the lemon add to thermomix bowl finely chop speed 7 / 10 seconds
- Add remaining ingredients, combine speed 5 / 10 seconds
- Roll into bite sized balls and cover in coconut
- Keep in refrigerator
