Healthy Coconut Lemon Balls

Ingredients

Scale
  • zest from one lemon
  • juice from one lemon
  • pinch salt
  • 10g vanilla extract
  • 130g desiccated coconut
  • 85g ground almonds
  • 50g coconut oil
  • 85g honey
  • 1/2 cup desiccated coconut, extra

Instructions

  1. Roll lemon with pressure on bench a few times (this will make it easier to juice)
  2. Peel the zest from the lemon add to thermomix bowl finely chop speed 7 / 10 seconds
  3. Add remaining ingredients, combine speed 5 / 10 seconds
  4. Roll into bite sized balls and cover in coconut
  5. Keep in refrigerator
