Healthy Coconut Lemon Balls

Ingredients

Scale
  • zest from one lemon, grated
  • juice from one lemon
  • pinch salt
  • 1 tsp vanilla extract
  • 1 1/2 cups desiccated coconut
  • 1 cup ground almonds
  • 4 tablespoons coconut oil
  • 4 tablespoons honey
  • 1/2 cup desiccated coconut, extra

Instructions

  1. Place all ingredients into food processor
  2. Blend for 2 minutes or until mixture has combined
  3. Roll into bite sized balls and cover in coconut
  4. Keep in refrigerator
