Chocolate Weet-bix Slice Recipe.  A delicious childhood classic recipe that is a great chocolate treat for morning tea or as a lunch box snack.

Ingredients

  • 6 Weetbix biscuits
  • 2 cups desiccated coconut
  • 1 cup caster sugar
  • 2 cup self raising flour
  • 1/3 cup cocoa
  • 300g salted butter, melted
  • 2 teaspoons vanilla essence
  • 3 cups icing sugar
  • 2 tablespoons cocoa
  • 1/3 cup hot water
  • desiccated coconut to decorate

Instructions

  1. Preheat oven to 180°C, fan forced.
  2. Line a lamington pan (30x20cm) with baking paper.
  3. In a large bowl crush the weetbix, add coconut and caster sugar.
  4. Sift flour and cocoa into bowl. Stir to mix through.
  5. In a jug mix together melted butter and vanilla.
  6. Pour into bowl of dry ingredients and mix to combine.
  7. Spoon mixture evenly into pan. Press mixture down firmly into pan.
  8. Bake slice in oven for 20-25 minutes or until golden and cooked through.
  9. Once slice has been removed from oven prepare the icing.
  10. In a large bowl sift icing sugar and cocoa.
  11. Add water and stir well to combine.
  12. Pour icing over slice while still hot.
  13. Sprinkle with additional coconut.
  14. Allow slice to sit until completely cooled.
  15. Slice into small squares to serve.
  16. Store in an airtight container in the fridge or in a cool dry place.
