Coconut Ice Yoghurt Cake

Ingredients

Scale
  • 125g butter, room temperature
  • 1 cup caster sugar
  • 2 eggs
  • 1 cup self raising flour, sifted
  • 1/2 cup plain flour, sifted
  • 1/2 cup desiccated coconut
  • 200g greek yoghurt
  • 2/3 cup milk

Icing

  • 2 cups icing sugar
  • 1 cup desiccated coconut
  • 2 egg whites
  • 3 drops (or to your liking) pink food colouring

Instructions

  1. Preheat oven to 160C, fan forced
  2. Grease a round cake pan
  3. Beat butter and sugar in electric mixer, until light and fluffy
  4. Add in eggs, milk and yoghurt, combine together
  5. Stir through flour and coconut until just combined
  6. Bake cake for 40-45 minutes or until cooked through and golden
  7. Allow to stand in pan for 5 minutes then cool on wire rack

Icing

  1. Place all ingredients into bowl, use electric mixer to mix together
  2. Ice cake when completely cooled
