Ingredients
Scale
- 60g butter
- 1/4 cup brown sugar
- 1 egg
- 1 1/2 cups Wholemeal SR Flour
- 1/2 tsp ground cinnamon
- 1/2 cup natural yoghurt
- 1/4 cup grated carrot
- 1/4 cup sultanas
Icing
- 125g cream cheese (room temperature)
- 3/4 cup icing sugar
- 1 tlb natural yoghurt
- 2 tsp orange juice
- 1 tsp grated orange rind
Instructions
- Preheat oven to 180C
- Grease a slice pan and add baking paper
- Beat butter and sugar together until light and fluffy
- Add egg, mixing well for 30 seconds
- Fold flour and cinnamon through mixture
- Add in yoghurt, carrot and sultanas, mix well
- Spread mixture into slice pan
- Bake for 20-25 minutes or until golden
- Allow to cool for 5 minutes then remove from pan
Icing:
- Beat cream cheese until it is smooth
- Add icing sugar, yoghurt, juice and orange rind
- Spread icing over slice
- Slice into desired sized pieces.
- Keep refrigerated.
Notes
I don’t suggest freezing this recipe as I think it may dry it out too much if you do.
