Carrot Slice

Ingredients

Scale
  • 60g butter
  • 1/4 cup brown sugar
  • 1 egg
  • 1 1/2 cups Wholemeal SR Flour
  • 1/2 tsp ground cinnamon
  • 1/2 cup natural yoghurt
  • 1/4 cup grated carrot
  • 1/4 cup sultanas

Icing

  • 125g cream cheese (room temperature)
  • 3/4 cup icing sugar
  • 1 tlb natural yoghurt
  • 2 tsp orange juice
  • 1 tsp grated orange rind

Instructions

  1. Preheat oven to 180C
  2. Grease a slice pan and add baking paper
  3. Beat butter and sugar together until light and fluffy
  4. Add egg, mixing well for 30 seconds
  5. Fold flour and cinnamon through mixture
  6. Add in yoghurt, carrot and sultanas, mix well
  7. Spread mixture into slice pan
  8. Bake for 20-25 minutes or until golden
  9. Allow to cool for 5 minutes then remove from pan

Icing:

  1. Beat cream cheese until it is smooth
  2. Add icing sugar, yoghurt, juice and orange rind
  3. Spread icing over slice
  4. Slice into desired sized pieces.
  5. Keep refrigerated.

Notes

I don’t suggest freezing this recipe as I think it may dry it out too much if you do.
