This is a super easy meal to put together on a busy weeknight

Ingredients
- 1 tablespoon olive oil
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 425g can tuna in brine, drained
- 410g can crushed tomatoes
- 100g baby spinach leaves
- Salt and pepper, to taste
- 8 burrito tortillas
- 1 cup grated tasty cheese
Instructions
- Preheat oven to 180C
- Grease a rectangular casserole dish
- Heat oil in frying pan over medium heat.
- Add onion & garlic, stir for approx 4 minutes or until tender
- Add tuna, tomatoes, spinach leaves, salt and pepper
- Cook, stirring, for 5 minutes or until heated through
- Spoon tuna mixture onto tortillas
- Roll tortilla into a tube then place into casserole dish
- Sprinkle tortillas with cheese
- Bakein oven for 15 – 20 minutes or until cheese has melted
- Serve with salad
