Tomato, spinach & cashew dip

This tomato, spinach & cashew dip is my absolute favourite dip of the moment.  It’s so flavoursome and a really lovely snack when you are feeling a little bit peckish for something savoury.  I usually make sure I have some homemade dip in the fridge especially for those moments around 4pm when I’m feeling a little hungry (before I would have reached for something sweet).

It has nuts in it so not a dip you could back in lunch boxes that have a ‘nut free’ policy.

Spinach Tomato and Cashew Dip

I made this Tomato, spinach & cashew dip in my Vitamix.  I’ve enjoyed playing around with the Vitamix, making up breakfast smoothies, dressings for salads, dips, I even made a carrot cake.  Read my review of the Vitamix here.

Ingredients

Scale
  • 280g sundried tomatoes with oil
  • 1 garlic clove
  • 150g salted cashews
  • 30g baby spinach leaves, stalks removed
  • 1 tablespoon vinegar
  • pepper

Instructions

  1. Place all ingredients into a blender and blitz on high speed for 30 seconds or until all combined and desired consistency.
  • Category: Dip

Ingredients

Scale
  • 280g sundried tomatoes with oil
  • 1 garlic clove
  • 150g salted cashews
  • 30g baby spinach leaves, stalks removed
  • 1 tablespoon vinegar
  • pepper

Instructions

  1. Place all ingredients into bowl – Pulse on Turbo 4-6 times or until chopped to your liking (I like mine chunky)

 Product Stockists: Dip Platter from Tupperware, purchased a few years ago, not sure if it’s still in their range, I couldn’t find it on their website.
