If your kids love those crunchy store-bought LCM bars, they’ll be thrilled with this homemade version made in the Thermomix. These Thermomix Chocolate Rice Bubble Bars are so quick to whip up and much more budget-friendly than the supermarket kind.

They have a lovely light crunch and a subtle chocolate flavour, sweetened naturally with honey and dates. I’ve made a marshmallow version in the past, but this one is a little healthier, it doesn’t hold together quite as tightly, so it’s best kept in the fridge. My kids still pop a piece in their lunchbox with an ice pack and secretly hope it crumbles, because they love eating it with a spoon!

This is one of those recipes that’s perfect for busy families, no baking, minimal ingredients, and the Thermomix does all the work.

These Thermomix Chocolate Rice Bubble Bars are quick, healthy, and easy to make. A simple no-bake slice made with rice bubbles, cacao, honey, and dates — a delicious homemade version of the classic LCM bar.

Ingredients
  

  • 4 cups rice bubbles
  • 1/2 cup desiccated coconut
  • 5 medjool dates
  • 130 g coconut oil
  • 2 tablespoons cacao powder
  • 120 g honey

Method
 

  1. Line a slice baking tray with with greaseproof paper.
  2. Place the 4 cups rice bubbles and 1/2 cup desiccated coconut into a large bowl and set aside.
  3. Add 5 medjool dates to the Thermomix bowl, chop for 5 seconds / speed 6.
  4. Add the 130 g coconut oil, 2 tablespoons cacao powder, and 120 g honey. Cook for 5 minutes / 100°C / speed 2.
  5. Pour the mixture over the rice bubbles and coconut, then stir with a spatula until everything is coated and combined.
  6. Transfer the mixture into the prepared tray, pressing down firmly and evenly.
  7. Chill in the fridge for one hour or until firm. Slice into bars once set.

Notes

  • Bars must be kept cold, otherwise they’ll melt and fall apart.
  • Swap honey for rice malt syrup for a milder flavour.
  • Drizzle melted chocolate over the top for a sweeter treat.
