- 125g butter, softened
- 3/4 cup caster sugar
- 2 eggs
- 2 cups self raising flour
- pinch of salt
- 1/4 cup jam, any flavour
Instructions
- Preheat oven to 180°C, fan forced.
- Line 2 baking trays with baking paper or a silicone mat.
- In an electric mixer, add butter and sugar, mix for 3-5 minutes until light and fluffy.
- Add eggs, mix to combine.
- Add flour and salt, mix to form dough.
- Roll tablespoon of mixture into balls, flatten slightly.
- Place on baking tray, leave 5cm between each.
- Press floured finger deeply into the centre of each ball.
- Fill each hole with your favourite flavour of jam.
- Bake biscuits for 10 minutes before transferring to a wire rack to completely cool.
