Sweet and Sour Meatballs

Ingredients

Meatballs

  • 1kg beef mince
  • 1 cup dried bread crumbs
  • 1/2 cup milk
  • 1 egg
  • salt and pepper, to taste

Toppings

  • 1 green capsicum, sliced
  • 1 x425g can chopped pineapple, reserve the juice
  • 1 onion, chopped

Sauce

  • 2/3 cup brown sugar
  • 1 cup tomato sauce
  • 1 cup water
  • 1/3 cup vinegar
  • 1/3 cup Worchestire sauce
  • 1 tbsp cornflour
  • reserved pineapple juice

Instructions

Step 1: Preheat Oven

  1. Preheat oven to 180°C.

Step 2: Make the Meatballs

  1. In a large bowl, mix together the beef mince, bread crumbs, milk, egg, salt, and pepper.
  2. Roll the mixture into evenly sized meatballs and place them in a single layer in a lightly greased baking dish.

  3. Arrange the meatballs in a single layer in a lightly greased baking dish.

Step 3: Add the Toppings

  1. Evenly layer the sliced capsicum, chopped onion, and pineapple over the meatballs.

Step 4: Prepare the Sauce

  1. In a bowl, combine the brown sugar, tomato sauce, water, vinegar, Worcestershire sauce, cornflour, and reserved pineapple juice.
  2. Stir until well mixed, then pour over the meatballs.

Step 5: Bake

  1. Place the baking dish in the pre-heated oven and bake for 45 minutes, or until the meatballs are cooked through.

Step 6: Serve and Enjoy

  1. Serve hot with mashed potatoes and steamed vegetables.
  2. Store leftovers in the fridge and enjoy the next night in fresh bread rolls for an easy, delicious meal.
