We recently had friends unexpectedly stay for dinner, so I quickly ran to the grocery store to pick up something for dinner and dessert. ย I didn’t want to go to too much fuss, I wanted something that was quick and easy. ย We had taco’s for dinner and Strawberry Eaton Mess for dessert, only 3 ingredients and takes minutes to put together. It doesn’t look so great dished up in a bowl, but it tastesย ooh so good and everybody was happy!

Ingredients
  

  • 300 ml thickened cream
  • 1 pack meringue nests
  • 350 g strawberries washed and hulled
  • extra strawberries to garnish

Method
 

  1. In a large bowl whip the cream until thick.
  2. Crush the meringue nests and gently fold through cream.
  3. Finely chop 250g of strawberries.
  4. Puree the remaining strawberries in a food processor.
  5. Swirl chopped and pureed strawberries through cream.
  6. Spoon into serving bowl.

I like to make this, too, but with plain yogurt rather than the cream (cream disagrees with me). Sometimes I add a tiny bit of icing sugar, if the yogurt is particularly bitter, but otherwise just as is!

I do something similar… Using the nests put a small dollop of cream then put mixed berries ( I use frozen that have been defrosted ) on top – serve – looks fantastic
The only prep is getting berries out of freezer, if you forget you can pop into microwave for a few seconds.
