Stewed Rhubarb with Apple and Strawberries

Description

Soft stewed fruits, delicious served warm with custard


Ingredients

Scale
  • 1/2 orange, zest only, finely grated
  • 1 orange, juice only
  • 60g sugar
  • 1 green apple, peeled, halved and cut into thin slices
  • 500g rhubarb, trimmed, cut into pieces
  • 250g strawberries, hulled, cut into thin slices

Instructions

  1. Place orange zest, juice, sugar, apple and rhubarb into a medium sized saucepan over medium-high heat.
  2. Bring to the boil then reduce heat to low, stirring occasionally for 10 minutes or until rhubarb and apple are tender.
  3. Add strawberries and cook for a further 3 minutes or until strawberries are soft.
