Mexican is one of my favourite cuisines, and this Thermomix Mexican Slow Cooked Beef Burrito recipe is full of flavour and a great dinner to prep the night before. Place in the slow cooker in the morning and simply serve in the evening.
This Thermomix Mexican Slow Cooked Beef is one of SkinnyMixers delicious recipes. I like to serve it with salad and cheese wrapped in a tortilla, although you could serve it on pasta too.
This recipe calls for 1/2 of a large chilli, we didn’t find it too spicy but if you have little ones or are sensitive to spicy foods you might want to add less chilli.
Ingredients:
- 1 clove garlic, peeled
- 1/2 large red chilli
- 20 g lime juice
- 2 tsp Mexican Spice Mix
- 1 kg gravy beef cubes
- 1 brown onion peeled, halved
- 50 g olive oil
- 1 tin chopped tomatoes
- 20 g tomato paste
- 15g vegetable stock concentrate
- 2 tablespoons Mexican Spice Mix
- 1 large red capsicum sliced
