Savoury Sausages with Pineapple

I made this savoury sausages with pineapple, mashed potato and vegetables for my family recently and it has been hailed the newest favourite family dinner, trumping Mexican and spaghetti bolognese.  The kids and hubby absolutely loved it.  I enjoyed it, although I’m not really a fan of hot pineapple, but it was easy enough for me to pick them off :).  The sauce from the casserole coupled with mashed potato was delicious!

This is a great recipe to make, not very hard at all. Add sausages into casserole dish, top with vegetables, mix sauce in a jug and pour on top.

While the sausages are cooking in the oven make some mashed potato and steamed vegetables. Add pineapple in the last 15 minutes of cooking. Here you have a delicious meat and 3 veg dinner, and easy family dinner.

You have to love these easy no-fuss dinners!

Ingredients
  

  • 8-12 sausages or enough to feed your family
  • 1 large onion sliced
  • 1 red capsicum sliced
  • 2 stalks celery chopped
  • 1 tablespoon cornflour
  • 2 tablespoons brown sugar
  • 1 tablespoons dijon mustard
  • 1/2 cup tomato sauce
  • 1 1/2 tablespoons soy sauce
  • 1/2 teaspoon mixed dried herbs
  • 425 g can pineapple pieces

Method
 

  1. Preheat oven to 180°C fan forced.
  2. Place sausages in a single layer in a large casserole dish.
  3. Scatter onion, capsicum, and celery evenly over sausages.
  4. In a large jug add juice from pineapples.
  5. Top with water to take it up to one cup.
  6. Add to juice, cornflour, sugar, mustard, tomato sauce, soy sauce and herbs.
  7. Mix, pour sauce over vegetables.
  8. Cover the casserole dish with aluminium foil (or silicone baking mat) and cook in the oven for 30 minutes.
  9. Remove dish from ove, stir pineapple pieces through casserole and return to oven, uncovered for a further 10-15 minutes or until sausages are cooked through.
  10. Serve with mashed potato and steamed vegetables.

Oh this is great, thanks. It’s very similar to a recipe of my Mum’s which I make every so often, but in hers you cook the sausages and make the sauce separately. I love that you can throw it all in the same dish in this version and just bake it. Anything that saves washing an extra frying pan and saucepan is a winner in my books.

I don’t mind pineapple in savoury so I think I’d really like this! Have you ever had a warm pineapple tart? They’re really good and I wonder if it would get around the hot pineapple thing? 🙂

Have you tried the recipe using fresh pineapple. The tinned pineapple is very sweet that could be the reason you are not fond of hot pineapple.

This didn’t cook in the oven for me. I don’t know whether it was the oven, too small a dish or the extra veg I added buI I ended up finishing it off in the electric frypan as it still wasn’t t cooked after an hour in the oven. Tasted delicious though, .will definitely cook again but in the electric frypan browning the onion and the sausages. Will still be a one pan dinner and a winner in this house.
