Do you have lots of leftover Christmas meat and other leftovers that you want to use up? There’s so much you can do with Christmas leftovers so that nothing goes to waste. Here are some yummy food ideas and recipes that you can do with your Christmas leftovers.
Leftover meat storage
We usually slice up all the meat so it’s easy to get to for future lunch and dinners. I store them in airtight containers in the fridge to help keep everything fresh. You can eat them like this or get a little more adventurous and cook some new dishes with your Christmas leftovers.
Quiche
Use up the ham in a quiche and add some salad leftovers from Christmas day to the side and you have a lovely light meal, which is perfect for after Christmas. View recipe here.
Cheesy Zucchini & Ham Bread
Not only is this a great way to use up leftover Christmas ham, but it’s also a great way to use excess vegetables you have in the fridge. I used zucchini, corn, ham, herbs, spring onion, you could also add in capsicum. View recipe here.
Roast Pumpkin, Spinach and Turkey Pasta Bake
This pasta bake is a delicious way to use up some leftover Christmas turkey meat. A creamy and very flavoursome roast pumpkin, spinach and turkey pasta bake. This bake made enough for our family of 5 plus leftovers for the next day. Serve with salad and you can easily stretch it out to feed 10. View recipe here
Cobb Salad
This is a really easy and quick salad to prepare and a great way to use up leftover Christmas Ham or Turkey along with some salad items you may have in your fridge. View recipe here
Ham and Coleslaw Roll
One of my favourite lunches after Christmas is Ham on a fresh bread roll with coleslaw. I’m sure there will be some leftovers from Christmas so that you can make these rolls on Boxing Day.
Leftover Ham Pizza
This was the kids favourite, a delicious ham pizza topped with whatever we had left in the fridge. Usually, I make our own pizza base, but I was in a hurry this day and I purchased some pre-made bases from the supermarket. Spread on some BBQ Sauce, 2 tablespoons grated cheese, ham, capsicum, salami, onion and cheese, then topped with more grated cheese, baked in the oven until golden.
Ham and Corn Muffins
This is a delicious muffin, especially if you are introducing the kids to the world of savoury muffins. It’s easy to make and freezable. I take them out of the freezer in the morning, place into the lunchbox and by lunchtime, it has thawed. View the recipe here.
