{RECIPES} Strawberry Muffins


  • 2 eggs, beaten
  • 300ml buttermilk
  • 80g unsalted butter, melted, cooled
  • 400g plain flour, sifted
  • 3/4 cup caster sugar
  • 1 tablespoon baking powder
  • Zest of 1 orange, grated
  • 250g strawberries, chopped


  1. Preheat oven to 180°C, fan forced.
  2. Line a 12-hole muffin pan with paper cases.
  3. In a large bowl add eggs, buttermilk and butter, mix to combine.
  4. Add flour, sugar, baking powder and zest, stir to combine.
  5. Gently fold through strawberries.
  6. Divide mixture among muffin cases and bake 15-18 minutes.
  7. Allow to cool.
