Ingredients
- 2 eggs, beaten
- 300ml buttermilk
- 80g unsalted butter, melted, cooled
- 400g plain flour, sifted
- 3/4 cup caster sugar
- 1 tablespoon baking powder
- Zest of 1 orange, grated
- 250g strawberries, chopped
Instructions
- Preheat oven to 180°C, fan forced.
- Line a 12-hole muffin pan with paper cases.
- In a large bowl add eggs, buttermilk and butter, mix to combine.
- Add flour, sugar, baking powder and zest, stir to combine.
- Gently fold through strawberries.
- Divide mixture among muffin cases and bake 15-18 minutes.
- Allow to cool.
