Kids have just arrived home from school and got stuck into their homework, so while they were doing that I quickly prepared a healthy after school snack for them, Ham & Zucchini Pikelets with a spoonful of herbed yoghurt. ย They really enjoyed them, something different and savoury for afternoon tea.

Ham & Zucchini Pikelets

Ingredients
  

  • 1 cup wholemeal self raising flour
  • 1/2 cup self raising flour
  • 1/4 cup tasty cheese grated
  • 1 medium zucchini grated
  • 3 slices ham thinly sliced
  • 1 1/2 cups milk
  • 2 eggs lightly beaten
  • spray oil
  • 1/2 cup plain low fat yoghurt
  • 1 tablespoon chives or whatever herbs you have on hand, finely chopped

Method
 

  1. In a small bowl mix together yoghurt and herbs, transfer to a serving dish
  2. Combine flours and cheese in a bowl
  3. Squeeze the excess juice from the zucchini and add to bowl along with the ham, milk and eggs.
  4. Stir to combine
  5. Spray oil into a frying pan on medium heat
  6. Spoon dollops of mixture into pan
  7. Brown on each side for approximately 2-3 minutes per side
  8. Serve with herbed yoghurt

Made these today (with a few substitutions to make them gluten free) for my fussy 3yr old and she loved them! Although I must admit mine didn’t look as pretty as yours! ๐Ÿ™‚

Can these be frozen? I noticed it serves 12 but I only have two small boys who don’t eat much.
