I purchased a bag of mixed dried fruit recently to put in the kid’s school lunch boxes, but they really didn’t like them, which was surprising, usually they enjoy dried fruit.  Rather than the pack going to waste I used it in this really simple fruit loaf recipe.

Please note with this recipe, you will need to let the loaf rest for 24 hours before cutting it up. I cut it up when I thought it was cooled enough, but it crumbled everywhere.  The next day it was so much easier to slice and the kids really loved it.  Little did they know it had the same fruit in it, win win!!

Allow this loaf to sit for 24 hours before slicing.

Ingredients

Scale
  • 175g butter
  • 150g castor sugar
  • 400g plain flour, sifted
  • pinch of salt
  • 4 tsp baking powder
  • 300g dried fruit mix
  • 125ml milk
  • 2 eggs

Instructions

  1. Preheat the oven to 180C
  2. Prepare and line loaf tin
  3. Melt the butter and sugar together in a medium saucepan over medium heat, stirring
  4. Once butter has melted remove from heat and allow to cool
  5. Place all dry ingredients into a mixing bowl, add the dried fruit
  6. Make a well and add in the milk, eggs and butter mixture, stir mix until combined
  7. Spoon mix into loaf tin
  8. Bake for 50 minutes or until golden and skewer comes out clean
  9. Remove from oven and allow to cool in tin for 20 minutes
  10. Cool completely on rack
  11. Store in an airtight container for 24 hours before slicing
