Can never go past a good chocolate muffin
Chocolate Muffins

Ingredients
Scale
- 2 1/4 cups self-raising flour
- 1/2 cup cocoa powder
- 1 cup caster sugar
- 3/4 cup dark chocolate chips
- 1/2 cup vegetable oil
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup dark chocolate chips, extra
Instructions
- Preheat oven to 160°C fan forced.
- Line a 12 hole muffin tin with paper cases
- In a large bowl sift in flour and cocoa
- Stir through sugar and choc chips
- Add oil, milk, vanilla and eggs and stir until mixture has just combined
- Spoon into muffin cases and sprinkle a few choc chips over each mixture
- Bake for 20-25 minutes or until skewer inserted into the centre comes out clean

Delicious! I have been having a wonderful time going through your freezer ideas this past week. I have 2 children in high school, yrs 7 & 12 and I’m at uni. So am filling the freezer before uni starts. Have made the banana/honey and carrot/honey so far & today my husband and I enjoyed these fresh out of the oven. Thanks so much for your ideas.

I just made these muffins with coconut oil instead of vegetable. They are delicious! My daughter said they taste like brownies and I agree. Thanks for the recipe.

How do you freeze these? How long do they keep?
Angella I like to freeze them the day I make them – that way it locks in their freshness. You can either wrap them individually and freeze, or pop them together in an airtight freezable container. They can be frozen for up to 3 months in the freezer. Happy cooking 🙂 Kat x
