Ingredients
Method
- Preheat oven to 160°C, fan forced.
- Line a 12-hole muffin pan mini muffin pan with muffin cases, or use a silicone muffin tray.
- Add oil, milk, vanilla and eggs to an electric mixer. Mix
- Sprinkle in flour and cocoa, sugar and chocolate chips. Mix until just combined, do not overmix.
- Divide mixture evenly into muffin pan and sprinkle with extra chocolate chips.
- Bake muffins for 20-25 minutes or until cooked through.
- Allow to cool in muffin tin for 5 minutes, then cool further on a wire rack.

Delicious! I have been having a wonderful time going through your freezer ideas this past week. I have 2 children in high school, yrs 7 & 12 and I’m at uni. So am filling the freezer before uni starts. Have made the banana/honey and carrot/honey so far & today my husband and I enjoyed these fresh out of the oven. Thanks so much for your ideas.

How do you freeze these? How long do they keep?
Angella I like to freeze them the day I make them – that way it locks in their freshness. You can either wrap them individually and freeze, or pop them together in an airtight freezable container. They can be frozen for up to 3 months in the freezer. Happy cooking 🙂 Kat x
