Chocolate Chip Biscuit

This is a deliciously soft choc chip biscuit that everybody will enjoy.

Do not over bake as these cookies are delicious soft.  I find they taste better using butter rather than margarine.  You could easily substitute the milk choc chips with smarties or m&m’s as a fun alternative, or even more delicious some white chocolate and macadamia.

These are my ultimate favourtie cookie recipe
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Course: Baking
Cuisine: Australian

Ingredients
  

  • 125 g butter room temp, chopped
  • 1/2 cup brown sugar
  • 1/2 cup caster sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups Self Raising Flour sifted
  • 200 g dark or milk choc bits

Method
 

  1. Preheat oven to 180°C, fan forced.
  2. Line 2 baking trays with baking paper or a silicone mat.
  3. Cream butter, brown and caster sugar.
  4. Add egg and vanilla, mix
  5. Add flour, mix
  6. Add choc bits. Have a little taste of the mix it is delicious!!
  7. Roll a heaped tablespoon, place onto baking trays, allow room for cookies to spread. Flatten slightly.
  8. Bake for 10 minutes or slightly golden.
  9. Rest on pan for 5 minutes, turn onto a wire rack to cool completely.

Notes

DO NOT OVER BAKE as these cookies are delicious soft.
Do not substitute butter for margarine as they won't taste as yummy.
Try white chocolate and macadamia as a substitute for milk choc chips.
Smarties or m&m's are a fun alternative

My recipe for these is very similar however I substitute Wholemeal Flour for the plain to make them a bit "healthier"

I also use M&M's instead of choc bits and sometimes add some cinnamon (1/2 tsp) too 🙂

Katrina I made these today – beautiful ! However can someone PLEASE tell me if I can freeze a container of these already made???

Hi Jenanddanny
You would be better off rolling the dough into a log and freezing it before they are baked, or you could roll them into the balls, freeze them individually before putting into a container in the freezer so that you can pull out a couple to bake when needed. I would not freeze them once cooked as they do not thaw all that well.

i tried them once and they were overcooked and burnt at the bottom so i started to take store-bought will give it another try his weekend

Do you think this recipe would work ok if I replaced the flours for gluten free flour alternatives.eg. Use gluten free plain flour and gluten free SR flour where it asks for plain flour and SR flour in the recipe. But keep everything else the same in the recipe? Thanks
