pumpkin scones


  • 1 tablespoon butter, room temperature
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup pumpkin , mashed and cooled
  • 2 cups self raising flour


  1. Preheat oven to 220C, fan forced
  2. Grease or line baking tray with baking paper
  3. In an electric mixer, beat butter, sugar and salt
  4. Add egg and pumpkin, mix to combine
  5. Stir in flour, mix to combine
  6. Place large spoonfuls of dough onto tray
  7. Bake scones for 10-15 minutes until lightly golden and cooked through
  8. Rest on tray for 5 minutes before transferring to a wire rack to cool completely, or serve warm


Tip: Slice scones in half, butter and add desired topping such as honey. Place top back on scone and freeze to easily add to lunch boxes.
