- 3 cups cooked pumpkin, mashed
- 250ml of sugar
- 3 eggs
- 250ml plain flour
- 250ml fresh cream
- 250ml of milk
- 1 teaspoon vanilla essence
- 160ml melted butter
- Cinnamon sugar, to serve
Instructions
- Preheat oven to 180°C, fan forced.
- Mix eggs, sugar, flour, cream, milk and vanilla essence together.
- Add melted butter.
- Add cooked and mashed pumpkin.
- Pour into a large oven safe dish (it’s very runny and that’s normal).
- Bake for 45-50 minutes.
- Sprinkle some cinnamon sugar over the top.
- Let rest for 15 minutes.
- Enjoy warm.
