- 125g peanut butter
- 60g honey
- 2 tablespoons coconut oil, melted
- 1 scoop (30g) vanilla protein powder
- 1 cup rice puffs
- 1/2 cup oats
- 2 tablespoons desiccated coconut
- 1/2 cup dark chocolate melts
- 2 teaspoons coconut oil
Instructions
- Line a loaf pan with baking paper, or use a silicone loaf pan for easy removal.
- In a bowl, combine the peanut butter, honey, and coconut oil. Mix well until fully combined.
- Sprinkle the vanilla protein powder into the bowl and mix it thoroughly into the peanut butter mixture.
- Add the rice puffs, oats and desiccated coconut to the bowl. Stir well to ensure the rice puffs are fully coated with the mixture.
- Spoon the mixture into the prepared loaf pan and flatten it evenly using the back of a spoon.
- In a microwave-safe bowl, add the dark chocolate and coconut oil. Microwave on medium for 1 minute and 30 seconds, or until melted. Stir every 30 seconds to ensure the chocolate melts smoothly.
- Pour the melted chocolate over the peanut butter base, spreading it evenly.
- Place the loaf pan in the refrigerator overnight to set.
- Once set, slice the mixture into bite-sized portions and enjoy!
