Peanut Butter Cookies

Ingredients

  • 125g butter, room temperature
  • 1 cup crunchy peanut butter
  • 1 cup brown sugar
  • 1 egg
  • 1 3/4 cups self raising flour
  • 3/4 cup unsalted roasted peanuts, roughly chopped

Instructions

  1. Preheat oven to 180C
  2. Line 2 baking trays with non-stick baking paper
  3. In electric mixer beat the butter, sugar and peanut butter until creamy
  4. Add the egg and beat until combined
  5. Sift the flour, add peanuts and stir
  6. Roll a tablespoonful of the mixture into a ball, place on baking tray
  7. Slightly flatten each ball with the back of a fork
  8. Bake in preheated over for 12-15 minutes or until golden and cooked through
  9. Stand on baking tray for 5 minutes before transferring to a wire rack to cool
