- 125g butter, room temperature
- 1 cup crunchy peanut butter
- 1 cup brown sugar
- 1 egg
- 1 3/4 cups self raising flour
- 3/4 cup unsalted roasted peanuts, roughly chopped
Instructions
- Preheat oven to 180C
- Line 2 baking trays with non-stick baking paper
- In electric mixer beat the butter, sugar and peanut butter until creamy
- Add the egg and beat until combined
- Sift the flour, add peanuts and stir
- Roll a tablespoonful of the mixture into a ball, place on baking tray
- Slightly flatten each ball with the back of a fork
- Bake in preheated over for 12-15 minutes or until golden and cooked through
- Stand on baking tray for 5 minutes before transferring to a wire rack to cool
