This Peaches and Cream muffin recipe is not only delicious but really easy to make – place all muffin ingredients into the bowl and mix! These muffins are great for kids lunchboxes and you can enjoy one or two for afternoon tea with a cuppa!

Ingredients
  

  • 1 1/2 cups self raising flour sifted
  • 1/2 teaspoon cinnamon
  • 1/2 cup caster sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup tinned peaches diced
Cream Cheese Filling
  • 1 tablespoon caster sugar
  • 1/4 teaspoon cinnamon
  • 85 g cream cheese at room temperature

Method
 

  1. Preheat oven to 180°C, fan forced.
  2. Lightly grease a 12-hole muffin tray or line with paper patty cases.
  3. In a bowl add 1 1/2 cups self raising flour, 1/2 teaspoon cinnamon, 1/2 cup caster sugar, 1/4 cup vegetable oil, 1 egg, 1/3 cup milk and 1 teaspoon vanilla extract, mix to combine.
  4. Gently fold in 1 cup tinned peaches.
  5. In a small bowl add 85 g cream cheese, fold the 1/4 teaspoon cinnamon and 1 tablespoon caster sugar, mix until smooth.
  6. Spoon one small scoop of muffin mixture evenly into muffin cases, shake muffin tray so mixture covers bottom of each base.
  7. Spoon cream cheese into each muffin tray.
  8. Spoon remaining batter over top.
  9. Bake muffins in oven for 18-20 minutes or until golden and cooked through.
  10. Rest in tray for 5 minutes before transferring to a wire rack to cool completely.
