Ingredients

  • ½ cup finely chopped dried apple
  • ½ cup sultanas
  • ½ cup dried cranberries
  • ½ cup SR Flour
  • ½ cup whole meal SR Flour
  • ¼ cup brown sugar
  • 1 cup nut free untoasted muesli
  • 1 cup reduced-fat plain Greek-style yoghurt
  • 2 eggs, lightly beaten
  • ¼ cup olive oil

Instructions

  1. Preheat oven 180C.
  2. Grease 20cm x 30cm lamington pan, line with baking paper.
  3. Place apple, sultanas, cranberries, flours, sugar and 2/3 cup muesli in a bowl.
  4. Stir to combine.
  5. Whisk yoghurt, egg and oil together in a jug.
  6. Fold yoghurt mixture into muesli mixture until just combined.
  7. Pour into prepared pan.
  8. Sprinkle with remaining muesli
  9. Bake for 20 min or until skewer inserted in centre comes out clean.
  10. Stan in pan for 5 min.
  11. Turn slice out onto wire rack to cool.
  12. Cut into rectangles. Serve.

Notes

Use nut free muesli, as most schools have a no-nut policy to protect children
at risk of an allergic reaction.

This slice can be frozen, wrap individual slices in plastic wrap, then foil.
Freeze up to 1 month.
