If you’re after a quick and elegant appetiser, these Mini Smoked Salmon Pikelets are such a winner. I made them recently when visiting friends, it’s that time of year where we’re all bringing a plate and they were a huge hit.

They look impressive, taste delicious, and are incredibly simple to prepare. I used pre-made pikelets to save time, but you can certainly make your own if you prefer. The creamy, herby topping paired with salty smoked salmon and a hint of lemon makes every bite light, fresh, and moreish.

These are perfect for entertaining, especially during the festive season, or even as a simple starter when you’re hosting lunch or dinner at home.

To make the topping extra pretty, I spooned the cream cheese mixture into a zip-lock bag, snipped off a corner, and swirled it over each pikelet — it makes them look a little fancy without any effort at all. Then it’s just a small piece of smoked salmon on top, a sprinkle of chives, and they’re ready to serve.

Ingredients
  

  • 250 g spreadable cream cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon parsley chopped
  • 1 teaspoon chives chopped
  • 200 g smoked salmon
  • 1 packet of mini pikelets
  • extra chopped chives

Method
 

  1. In a bowl mix cream cheese, lemon juice, parsley and chives, mix to combine well
  2. Spoon cheese mixture into a zip lock bag. Cut on corner to swirl mixture onto pikelet
  3. Top each piklet with pieces of smoked salmon
  4. Sprinkle with chopped chives
  5. Cover and refrigerate until ready to serve
