  • 1 small head cauliflower, trimmed and cut into florets
  • 30g butter, softened
  • 1/3 cup parmesan cheese, finely grated
  • 1 teaspoon minced garlic
  • salt and pepper to season


  1. Boil water in a large saucepan on high heat.
  2. Add cauliflower, cook for 15 to 20 minutes or until tender.
  3. Drain and return to saucepan.
  4. Add butter and garlic and mash in saucepan until just smooth (may still be grainy).
  5. Stir through cheese and season with salt and pepper.
  6. Serve.
