Mangoes have to be my absolute favourite fruit of all time. I have a slight obsession with them actually, mango season makes my heart sing. Imagine my excitement when I teamed up with Mr KP (Kensington Pride) Mangoes to bring you this recipe now that we are coming into mango season! These Mango Macadamia Muffins are super delicious and moist with a delightful crunch of macadamia. Bonus is that they are freezer friendly so you can bake up a batch and pop them into the freezer to conveniently have on hand for an after school snack, pop them on the bench that morning so they are defrosted by the afternoon. Mr KP Mangoes are naturally sweet and juicy, with an exceptional mango flavour and aroma loved by kids and adults alike, making them the perfect healthy treat. Mr KP Mangoes are versatile for a range of cooking purposes, and can be easily added to fruit smoothies, muffins, salads, salsa, savoury dishes or simply on their own with their glorious juices running down your arms!

- Preheat the oven to 180C, fan forced.
- Lightly grease and line a12 muffin hole pan.
- Add yoghurt, oil, eggs and vanilla extract to an electric mixer, mix on medium to combine.
- Add flour, nuts, coconut and sugar to the bowl, mix until just combined.
- Slice mango cheeks and cube flesh. Remove as much flesh from the seed as possible and mash.
- Fold mango through muffin batter, do not overmix.
- Spoon batter evenly into muffin tray.
- Bake them for 18 minutes or until golden and skewer comes out clean.
- Allow to sit for 5 minutes, then turn onto a wire rack to cool.

Recipes? Mangoes don’t last long enough in my house for me to make anything with them, although I do like a fresh salad with mango or a delicious mango smoothie!
Usually our mangoes get eaten fresh but we are partial to a good mango chicken for dinner!
I could suggest a Mango Daqueri … but for me just plain, fresh mango sliced onto a creamy vanilla ice-cream. You can’t beat the simplicity and deliciousness of that!!!! xxx
My husband loves mangoes and his favourite birthday treat is always a mango cheesecake! Yum!
My mango banana berry smooth with fog hurt, chia seeds and LSA- a delicious breakfast that keeps me going till lunch 🙂
Mango Chicken – yum – Chicken breast chopped, fried up until cooked then add a chopped Mango or two to the pan and let simmer. taste and if needed add some chicken stock cube. Easy

mangoes are rarely in our house long enough to reach a recipe. A fresh mango smoothie or a fruit salad is lovely but even better biting into a fresh mango as the juice runs down your arms

We love mango salsa served with baby snapper. It is made by mixing fresh coconut flesh, coriander, lime juice, lychee, and of course mango. Season with salt and pepper and a good glue of olive oil. I throw in a sliced Birdseye chilli after the kids have been served.

I love mixing mango pulp with rice cream… it tastes soooo good!
I love eating mangoes just as they are! But I do have a lovely mango salad recipe which has mango, red onion, rocket, cucumber and corn kernels in it. Yum!
Mango by itself or in a smoothie but these muffins sound delicious. Do you mash all the fruit or just that around the seed? Also bet I can’t win that box of mangoes in the US but boy, I’d love to!

I love to eat mangoes just as they are! Cut the cheeks and score with a knife and go for it. I also love to suck the stone….messy but who cares!
Mangoes Ned nothing else, but when I get a tray I love to freeze some to use in delicious mango smoothies. Add to frozen banana, passion fruit pulp, plain yoghurt, coconut water or milk and whizz it up. yumm!
We eat mangoes fresh but if they get soft we love cooking curried pork and mango!

Frozen mango and banana ice cream. Freeze banana and mango, then blend together with a small amount of cream, refreshed and yummmy!
Ah – we love making mango lassi – the kids picked up a taste for these drinks at Indian takeaways. We also love fresh mango slices in Thai-style salads, sprinkled with fresh chilli and mint. So many ways! It really is the taste of summer for us.
My favourite is Mango, feta and pine nut salad.

Mango madness come at us, we love them fresh the best, just sliced and turned out, perfect for cubing, then we might make a fruit salad covered in passion-fruit, then some mango bran muffins, yummy!

I love MANGOS and my favourite Mango recipe is MANGO CHICKEN…a mild curry for people that love a little bit of spice in their food that tastes Great!
I blitz the mango flesh with coconut cream and freeze in icy pole moulds for delicious & healthy ice blocks. The whole family loves them!
