- 250g butter, room temperature
- 1 cup castor sugar
- 1 1/2 tsp vanilla essence
- 3 eggs
- 2 1/4 cup self-raising flour
- 1 cup dark chocolate chips
- 1/2 cup sultanas
- 1/2 cup coconut
- 3 cup cornflakes, lightly crushed
- 2–3 cups cornflakes, extra (not crushed)
Instructions
- Preheat oven to 180°C, fan forced.
- Line two baking tray with baking paper or silicone mat.
- Cream butter and sugar until pale and fluffy.
- Add vanilla and eggs, gently beat together.
- Fold flour through mixture, until well combined.
- Add crushed cornflakes, chocolate chips, coconut and sultanas, stir gently.
- Roll a heaped tablespoon of mixture into a ball, then roll through extra cornflakes, flatten slightly.
- Bake in oven for 10-15 minutes or until golden.
- Rest on pan for 5 minutes, turn onto a wire rack to cool completely.
